I made some spicy beef jerky for my son and his girlfriend for Christmas using every hot sauce and cayenne pepper in the pantry and decided to make teriyaki jerky for us today.

Bottom round @ $4.99/lb. in the double insulated Memphis Pro pellet grill at 180 degrees for 5 hours and a few thicker ones at 5 1/2 hours. The Memphis is totally unaffected by weather.
 
Love beef jerky. Can never remember the recipe I last used. :( when eye of round used to go on sale (ha ha ha ha) for 77cents I would stock up. I do a full heat though. No nitrate, full cook. Turns out great.
