At $2.99LB for a Tri-Tip at Stater Bros.how could you not buy one.

Trimmed up the Tri-Tip.
Burgundy wine, garlic, olive oil, black pepper, and some honey for a 24 hour marinade.
Pulled from the marinade and switched in to a new bag for a 9 hour sous vide cook at 129*.
Sorry no photo.
Pulled the Tri-Tip from the sous vide and put in a ice bath for 15 minutes. Again no picture.
After the VERY HOT SEAR on the BBQ.
Plated with the other guests, I gave the hot horseradish a squeeze and plop I got more horseradish than I need, so I split the horseradish and added some Mayo for the choke...win win.
Tri-Tip was so tender and tasty, ill be doing another one soon.
