At $2.99LB for a Tri-Tip at Stater Bros.how could you not buy one.

I did this one a little differently... If you haven't heard of Cardiff Crack.... here you go https://youtu.be/_IhQ7VZmke8

Trimmed up the Tri-Tip.

Burgundy wine, garlic, olive oil, black pepper, and some honey for a 24 hour marinade.

Pulled from the marinade and switched in to a new bag for a 9 hour sous vide cook at 129*.
Sorry no photo.

Pulled the Tri-Tip from the sous vide and put in a ice bath for 15 minutes. Again no picture.

After the VERY HOT SEAR on the BBQ.

Plated with the other guests, I gave the hot horseradish a squeeze and plop I got more horseradish than I need, so I split the horseradish and added some Mayo for the choke...win win.

Jeff that looks delicious! I love the marinade. To me wine definitely brings out a great taste in beef. Great looking meal!

Great plate shot Jeff interesting cook.
I have nevery had tri tip as of yet, in fact never even seen one in the stores around here.
But I would love to try one some day.

Hey Jeff that looks outstanding. Barb and I are tri tip junkies, our favorite cut of beef. I watched the video but it doesn't give the amounts used in the recipe. Would you mind sharing how much of what you used. I really want to give this a try. Thanks.

Remember Rich this is just a marinade, so you can make it to your liking. It might taste even better after 2 days of marinating?

I used a bottle of Pinot noir $8.99 from Trader Joes, 1/4 cup of olive oil, about 8 cloves of garlic, coarse black pepper to taste and about a 1/4 cup of honey.

Good luck Rich and Barb, its a good marinade for sure.

Its probably like chuck eye steaks around here, I have never seen one and want to try one. Happy hunting.

Good point Jeff, I have to admit Chuck eyes are much cheaper......your cook looked great and that is a interesting cut of beef.
Keep your great cook's coming.

That's a beauty Jeff. Plate looks wonderful. Marinade sounds terrific. Thanks for the link.

Thanks for the recipe Jeff, funny about the TJs wine, my daughter has worked for TJs for twenty years. She has worked in just about all of the TJs in South Orange County.
