I'm a Huge Weber user, I have both the WSM 18" and WSM 14", etc. I've done everything with those cookers including briskets with great success. I recently bought a pellet smoker, and decided to try it out with some spare ribs. I set the temp to 225F for 3 hrs, foiled the ribs for 2hrs, I added worcestershire sauce to the ribs while in the foil. I was really surprised and happy with the smoke ring on the ribs, they were super moist and tender. Very happy with the results.
