1st go round on WSM 18.5", ribs & pics

Not sure where to put this post but here goes.

My first go with my new WSM 18.5" happened yesterday. Bought cryo spare ribs at Cash and Carry. Very nice selection of meats. I have used their brisket and pork butts also. Only problem is for 2 people you gotta buy a lot of meat. y ribs were 3 in a pak. All racks between 4-4.75 lbs.

I used BBQ Galore lump, about 3/4 of the ring cold and about 10 hot on top. Burried 4 pieces of apple wood with 2 small pieces on top of hot.

Started with all bottom vents at about 1/2 open. Top vent all open.
Temps ran from 223-260 all 6 hrs. Ave temp recorded 239. 95% of the cook all bottom vents were barely open, several times 2 vents closed and one barely open. I used planter dish in water pan. Would like to have had temps a bit lower but really couldnt without closing itall bottom vents. I tried that but coals seemed to want to go out. Next time I think I will try water in water dish just to see how temps run and fuel consumption goes.

I did the 3/2/1 sequence, however the last was probably more like 1/2 hr. Overall the ribs were really tasty, with nice smoke flavor, moist and good. A little too done in that they totally fell off the bone. May adjust cooking time next go.

no need to add water, just close the three botvents for ten minutestil the temp drops to your liking (225'F is my goal) then reopen slightly to maintain your desired temp. Five hours is a target time butt by all means, remove BEFORE you think you'll killem.
You can ALWAYS putem back on and cook longer, butt you can not reverse the results.
My 4 lb rack cooked for only 4 hours at 225-235'F yesterday... the old saying goes something like, "they're done when they're done"

Thanks guys. You'll notice that the phone book is open to "table pads" Guess the phone books gotta go. Oh The little BBQ cover started as a lean-to. Then it got sides for wind barrier, then to replace my wife's tv trays I had to build some shelves/work tables. I killed the back yard grass,on purpose" several years ago, and killed the front yard grass last year when water rationing came here. I gave my mower away, I love not cutting lawn.

Ah you saw that aye? Went to an estate sale this am before the smokin begun. Found a Weber chimney for 4 bucks. Couldn't resist even tho I have 2 non-weber chimneys. Oh, the sold tag I had to put on the chimney in the yard so no other dang BBQers would get 'er.
 
I have found that 2 hours in foil is way to long for me. I have gone to a 2.5-1-.5 then sauce on my rib cooks or even some time no foil at all. I think the foil reduces the bark of the ribs. Try not using it and see how it works for you. I usually cook BB's so if your doing spares they might take a bit longer.
