I had a plan and stuck to it!
Started with 2 pork butts, added Dwain's "wicked beans" in the last few hours of the butt smoke. Pulled the butts foiled and wrapped them like a newborn and put in a cooler. Pulled the water pan and reset for "Cornell Chicken" and ABT's.
I documented everything and all went well, even the weather was perfect.

And that was my first cook, I have enough food for the week and I'm tired!......but full ;)

Also made K. Krugers "another cole slaw" that also was superb. Big thumbs up also to Dwain Pannell for his wicked beans!

I followed the directions given on this site from some awesum BBQ freaks like me! Thanks to all this family for giving me the desire & confidence to tackle this with little to no stress.
I would have struggled with out all the HUGE knowledge given me here!
Thanks everyone! Al

Great job. One cook.. Lots of food. Smart.

What's the wooden thing with the slats on both sides in the next to last picture? Hot mat/plate?

Brad your correct, a buddy of mine is a furniture maker. he takes some of his scraps of hardwood and does a quick router job on them. They make great xmas gifts. I have them in square also, use them almost daily on my wooden kitchen table.
Sharp eye there!:)
That 22 WSM ate up some fuel so I wanted to get as much out of the cook that I could.

Al,

A Very Excellent cook.
Now tell the truth... This wasn't your very first cook on the WSM, was it ?????

You hit it out of the park. Great Job ! Fun too, I bet :wsm:

ps... the 22's fuel appetite will diminish in good time...

Bob

Thanks Bob, yes it was my first WSM cook. But with all the reading and advice on this site made me feel like I've been doing it for years.
I have ran tons of K blue through my performer over the past 20 years or so. But never any cooks past 5 or 6 hours. I have had friends go buy Weber's after eating my ribs, but I wanted to try some real slow and low smoke. And big grin for Fun, I had a blast!
