This meal was delicious!!!! This had a nice spicy touch to it. Next time I'm going to add some garlic and a little more onions for the chile Rojo.

Chile Rojo with nopales.

Rice was made with enchilada sauce. This ideas was from this thread. Thanks Rich it was delicious.
