    Strip Loin Roast leftovers

    Hi all, I am ISO leftover recipe ideas for a Strip Loin Roast. Picked up a nice 5 lbs roast on sale at the local Giant and did it rotisserie stye rubbed with just some salt and pepper. The roast turned out great but now I have a lot leftover. If anyone has any recipes I would most appreciate it. Right now I am thinking some basic quesadillas, some steak tacos and maybe a beef stew. There is quite a but left so I can certainly do more than one dish. I am open to ideas and suggestions.

    Slice it, vacuum seal (as best you can) and freeze it in serving size portions. Thaw for some great sandwiches down the road

    Thanks, great idea. I do have a very nice Weston Vacuum Sealer and will save some for leftovers this week!
