Quick Pepper Stout Beef Question

I'm trying this next week for a friendly gathering. How long does Pepper Stout Beef take from beginning to end?

It will need to be done by 6pm. What time should I plan on putting the meat on?

I have gone as long as 9½ hours with a 4lb chuck roast

sometimes, it goes loooong.

my suggestion is: if you absolutely positively need it for dinner at 6pm, put it on at 6am.
OR make it the day before. It's ALWAYS tastes better the day after sitting in those flavours and getting goofy an' all....


it reheats very easily.
 
Now that I think about it Jim's right. Do it the day before as the flavors are always better the next day. It is easy to reheat like Jim said.
 
I would but my son is in for a couple of days and is leaving before the other event. I'm doing baby-backs today. I'll get up a 6am to do the beef. 12 hours should be enough.

If I have individual portions I vacuum seal them and reheat those sous vide. What would be the best way to reheat a whole pan if done the day before?
