My New Years Resolution

was to try something different:). After 9 yrs I tried my second overniter and first on the big guy WSM.
First time using KBB and Hot water in the pan and to just go with the built in lid therm.
A couple of observations,
The big guy is a fuel hog, started with a full ring ( most of a 18# bag of KBB ) and I'm getting ready to add more.
Water pan holds alot of water, I started with a gallon but just added more.
Built in therm held a steady 215* all nite, I really think I was closer to 240 > the amount of fuel I went thru, but that's ok.

Started the 18# brisket @ 11pm, seasoned with SPOG with Oak & Pecan for flavor.

I'm gonna check the int bout noon and have a beer.

That was at noon int temp was 160ish.

Hour later time for a foil nap in a 275 oven. Coals are dead but I like the color, bark tastes amazing.

My Son Josh just said " Dad, that's dam good, melts in your mouth" makes me proud because we both worked on this together.
