    Dave, do you notice a difference at all in cooking times with meat on bottom grate verses top? I haven't had the need yet to use both grates but that might help in answering the cooking time question if identical cuts Of meat were cooked on the 2 grates would one cook faster than the other.

    I had a hard time getting my smoker hot enough when I first bought it. Try using lump charcoal for ur chimney starter. lump burns hotter but shorter.     Jeff didnt see this post, I have a 22.5 wsm myself and a friend of mine has the 18 and the biggest difference is fuel consumption. Mine spends charcoal like congress spends on a budget. If I could have a do-over I think I might've swinged to the 18. It's nice to have the extra room if need be...

    Couldn't agree with you more. Each smoke run I've done it's held a consistent temp for me. I've ran the 5 hr smokes to the 11 hr smokes and each time it's little to no maintenance to maintain the temp.

    Looks great! I noticed you foiled the water pan, did u run it dry without water? If so, how'd it turnout. I've been tempted to try and cook brisket like that just nervous the meat will turn out dry.

    Wilson , nice pick . So do u have the 22.5? Or are u looking into it cuz there are some differences between the 22 and 18. It's worth reviewing before u buy it just to make sure it's the one u want.
