    Does anyone here use an IR Thermometer (non-contact model) to track surface tempertures on the surface of the griddle? I'm still somewhat un-experienced with griddle cooking and was wondering if tracking surface temps is needed while griddle cooking.

    I'm not sure how many lbs of Lump I added to the basket (WSM 22.5) when I started. There was already about half a basket before I added. I know it was full when I started the cook at noon. I'm curious to see how far it will go at 235* with that Guru Digi3 in place .....!!!!

    Hi Mark Wilson, that's exactly what I have. I have two, one each across from the other (just because), and use little brass caps over the holes. I also have one in the lower bowl so I can use the lower bowl as a grill. Works very well.
