    Ha. They probably both do work great. I do chickens on the kettle and they end up perfect. Interested in using the WSM because a turkey is about all I have not done on it.

    I have gone back and forth on this as well. I usually apply my rub the night before. This past weekend I woke up at 5:00 couldn't go back to sleep so I went and bought two 6 lb buts to smoke for a neighborhood party.     Chris i had the same question/debate last year. I bought the 18.5 WSM and love it. I smoked 40 lbs on my 40th birthday. The kettle is fine but if you want to smoke more and babysit less go with the WSM.

    A buddy of mine, who we call Ogre, is now bottling his family recipe sauce. We always called it Ogre Sauce. Anyway it is great on ribs and chicken.

    STL Spare Ribs No Foil?

    I have gotten to where I just cook my on my kettle at about 375-400 for 1.5 hours with indirect heat. No foil. They are pretty darn good and very easy.
