    Different Smoke Wood-Can a you Really Tell a Difference?

    I'll piggy back on to the thread with another question. Is apple wood apple wood? What I mean is, is there a specific variety of apple tree that is used for smoke wood, or can you take wood from any apple tree variety and have success?

    Do you guys bring your smoker up to temp before putting the meat on and then readjust the vents to maintain it? Or do you throw the meat on and then adjust vents to keep it where you want? I know the meat will drop the temp, just didn't know if you needed to heat up the smoker first.

    I was around 225 for most of it. Sounds like I need a higher temp. The cooking instructions call for you to check it every 30 mins after the initial no peak portion. Thanks for the info though. It's starting to seem like this wasn't that good of a cook method.
