Need a new smoker - Considering a non Weber (looking for input)

First, I love my WSM. I have a Weber Charcoal Grill and a Smokey Joe for camping. I love them all. But I need two smokers and my Brinkman finally bit the dust. I have a bit party coming up and need to smoke more ribs than can fit on my original 18.5" WSM. I started thinking about adding a...

High Heat Rib Cook (Dedicated to K Kruger)

As a new member of the smoker's club, I too have found ribs to be a challenge. Good for you for getting your spare ribs satisfactory. I still haven't gotten spare ribs right yet. I did cook some BabyBacks to a point that I was very happy with them a few weeks ago. So far I haven't tried...

Need advice on in-progress butt smoke

Hi Pete, First, I'm no expert. I've had about 10 cooks so since getting into smokers. Second, I've had similar situations in the past. I wouldn't worry about the meat. It may come out a little more dry than it should but I think it will still be safe and tasty. If it is a bit dry, try...

Rub Storage Containers - What do you use?

I am looking for some large "tupperware" like containers for my rubs. I have seen some at a BBQ contest that I liked but I can't find them anywhere on the web. Part of my problem is I don't even know what to call them to do a decent google search. I want something that will hold over a pound...

I gave up and then succeeded. The first Ribs I cooked that I was happy with.

Wow, I just checked back and had 8 replies to my rib discussion. Oddly enough, I just had the last of the left over ribs this evening. They were still good. While I was very happy with my Baby Backs from last weekend, my goal is still to cook spare ribs on par with Fat Matt's Rib Shack in...

I gave up and then succeeded. The first Ribs I cooked that I was happy with.

I have been challenged by Ribs since starting to BBQ about 2 months ago. Being the typical guy I am, I wasn't about to start with baby backs and then graduate to spare ribs. Until I ruined about $130 worth of ribs. Last Sunday after judging at Que and Cruz I decided to try cooking some baby...

    July 4th Report...How did your Q do?

I posted a log of my cook here. My pulled pork came out good even though I didn't like the looks of the Boston Butts. I made the mistake of asking my Mom to go buy them down where she lives instead of bringing them with me. I was worried if I waited to buy them until I got down there they...

My July 4th Cook (ok, so I'm doing it on July 5th)

Well, one mystery solved. I just moved the temp probes to the other two butts. Apparently, even though I thought I had be careful not to, I had the probes very close to the bone. Now the butts are reading around 163 degrees which is more in line with what I would expect after 6 hours.

My July 4th Cook (ok, so I'm doing it on July 5th)

Now 5 hours into the cook. The Butts are starting to show signs of bark. They are about 180 degrees at this point. This is the first time I didn't rub the meat down with mustard before applying the rubs. I have heard the argument both ways and thought I would try it without the mustard to...

My July 4th Cook (ok, so I'm doing it on July 5th)

Yesterday I packed up my new WSM and heading down to Mom's house (about an hour south). Spent last night at my Dad's on the James River watching fireworks and having banana splits. We could see about 10 different fireworks displays from his balcony. I had asked Mom to get two 6 lbs Pork...

How do you clean your cooking gloves?

I'm fairly new to BBQing on a smoker. I bought a nice pair of welding gloves for the task. After 3 cooks they are fairly dirty and have some food product on them. They are suede leather so I can't toss them in the washing machine. So, how do you clean your gloves? Thanks, Kevin
