Started the girls at 5:30 this morning. I have 2 briskets and 3 butts on for a small catering gig this comming weekend. Its a beutiful day in the smoke.

Well, it took me a couple of days to weld this due to some work schedual issues but I finnaly got it done.

We took orders for 16 butts this past week. Smoked them up yesterday in 25* in the morning. Had to use two propane turkey cooker stands to heat the smokers metal. Pulled 8 off at 2pm and the rest at 4pm. We had to pull 4 and vacume seal the rest. Delivery to the FD and the PD will be on...

Smoking a case of butts with a friend today for X-mass presents. Tring some new rubs on a few. Calling for rain tonight. There was frost on the smoker till the coals hit the fire box.

Bought a couple of flats from Sams last night. Gave them a good rub with Bill's Brisket Rub and refridge over night. Got the smoker up to 225 this morning and the briskets went on at 10. Brisket sammies for dinner tonight. Bill

Anyone have any pics of home made rib racks? I have to smoke two cases and my smoker wont handle them laying down. Any help would be great. Bill
