    Competition Back Ribs

Congratulations on your finish up in Boston! Those ribs look wonderful! It may hurt me, but I'm trying BB next time out. I've done spares and done ok. Cooked Baby Backs for father's day that were absolutely stellar, got to try them in competition.

    Smoking whole duck

I don't dunk duck, but I do cook duck on a pan to catch the fat and prevent fire (been there, bice charcoal duck!). I prefer cooking duck halves rather than a whole bird. Oh, strain and save the duck fat. It's great for veggie sauteeing. Lighter flavor than bacon fat. Definitely prick the...

    PRIMO v. Big Green Egg

I have a large BGE and 2 XL Primo ovals. I use the large BGE more because it's efficient when cooking a small meal for 2. I do larger cooks on the Primo. The Primo oval is very versatile with extra racks to go underneath for indirect plates or juice catchers, racks that go up for 2 level...

    Thermapen 30 days later

Nope, don't think I'll flip brisket with my thermapen! I think the probe itself is really good for testing resistance of brisket. More than temp IMO, when there's no resistence brisket is done. That point seems to happen at a temp range of 190 to 215 or thereabouts. I used to think that it...

    Wood pellets OR Chunks???

Chips, chunks, logs -- mainegrillingwoods.com Really nice stuff -- good price with shipping included and they ship fast. Personally, I'm a pellet person on the WSM. I bury 2 filled foil packets of pellets in the unlit charcoal. Toss another packet on top of the lit coals. Smoke is delivered...

    Choke Cherry for smoke wood

On those black walnut pellets, try them next time you grill a steak. That's all I use them for but I always have some around. Flavor's in the same family as hickory, but tends to bitter if there's too much.

    http://www.mainegrillingwoods.com - Any experiences?

I was lucky and won $200 worth of Maine Grilling Wood. Good stuff! I ordered logs and some chips. I don't know how they offer free shipping! Logs were easily over 40#, box was full, wood is good. I'll order from them again!

    smoke pellets

The paragraph "If oxygen is present..." in my opinion has the most bearing on smoking with pellets. While a foil pouch keeps the pellets all neat and makes cleaning up a gas grill easier -- it's main purpose is to restrict the oxygen while heating pellets. The oxygen limit controls the burn...

    smoke pellets

I've got a theory DFWII -- I think you're probably doing one or more of these: Hole's too big in the foil packet -- let's too much air in and you get a smoke burst instead of slower delivery; Too much heat under the foil packet, one layer of briquettes (about 6) gives about 30 minutes smoke...

    smoke pellets

When it gets cold down here, I can smoke cheese in my Weber kettle. I use 6-7 kingsford briquettes all the way on one side. I make up 2 foil packets of pellets, heavy duty foil (I like orange with white cheddar). Poke a small hole with a toothpick. When coals are ready, spread them to a...

    Wood Source

Different hickory species have different intensities. You won't find the particular kind of hickory on the bag. Look for chunks that originate in Texas--you'll likely be getting pecan which is milder and sweeter anyway!

Want a sample of BBQrs Delight Smoking Pellets?

Realistically, you'll get 30 minutes from a packet of pellets at normal cooking temperature. When I do a brisket, I use a cup of pellets. That's 3 packets. 2 buried in the unlit charcoal, 1 tossed in with the lit chimney of coals. Sometimes even an extra 1/2 cup in the cast iron smoker pot...

This is for Bryan S...We do have a food-grade pellet in 20# bags BUT it isn't the same as the samples y'all are getting. This is a blended pellet to be used in pellet-fired grills like Traeger or Fast Eddy pits. Now, with that caveat, there's no reason you can't use 20# pellets just like the...

    Fab-P pulled pork

I use 4 to 1 ratio water to FAB. Add a good shot of hot sauce too. Some dry white wine is nice for pork in place of some of the water.

Clarification -- I did NOT win brisket at THE Jack! Maybe someday I'll qualify and get picked to compete there. I won 1st in Brisket at the Amazin' Blazin' BBQ Cookoff at the Wilson County Fair in Lebanon, Tennessee. Not a small thing, there were 53 teams there and this was my only call and...

Want a sample of BBQrs Delight Smoking Pellets?

Thank all of you for your pellet requests! Pleased to send 'em out to you. If they don't go out today, they will for sure tomorrow! It's called guerilla marketing! Try it, they'll buy it. Actually it really is good wood, works well with WSM, kettles, gas grills, electric grills & smokers...
