    Thanks for the info guys. I will def use the same amount of wood and take it from there. What abt the lump charcoal, do you suggest I use the same amount as well?

    Thanks Kev. For 2 slabs abt 3 - 4 lbs each I usually use approx 4 fist size chunks of hickory and 2 apple. You think I should bump that up for 4 slabs abt that same size?

    Have done ribs plenty of times, but always 2 or 3 slabs on 1 grate of the WSM. Plan to do 4 - 6 racks this weekend using both grates. Does this increase cooking time? Would you add more coal or additional wood chunks? Thanks very much!

    Wood chunks vs Chips

    Thanks for all the info guys. Has anyone used chips for ribs, if so do you add more chips as the cook progresses? When doing ribs I usually just use chunks and only had them once at the beginning of the cook.

    I have always used wood chunks for all of my cooks, my brother recently got a good deal on abt 20 bags of wood chips of varying woods. Any suggestions on the best way to use the chips? Just not sure how many to use and how frequently they need to be added to the WSM.

    Pre heat WSM?

    Should you always pre heat your WSM before adding your meat? Is it best to add the meat as soon as the coal is fully engaged or should you wait until you hit your 225 - 250 desired temp? thanks

    Turkey and ham in WSM

    Thanks very much! Yes a spiral ham. As far as the turkey, I know I am smoking it until it is abt 160 -165 in the breast(abt 3 hrs or so). What abt the ham? How long do you think that needs to go? I was thinking alot less than 3 hrs, so do I start the turkey on the bottom and then add the ham...

    Turkey and ham at same time?

    I will be using a already cooked ham from our local smokehouse. My concern is that the turkey needs to be cooked at a much higher temp than what I would need to just warm the ham. Any suggestions on temps and times? I will have a 12 - 14 lb bird and a 9 - 10 lb ham. Thanks!
