    Happy 4th. Just took 12lb brisket out of the Smokin-it and it’s hanging out in a 160 degree oven. And of course, it was done at 3:30 AM. Feeding starts at noon. Sides are watermelon fries, bbq beans, and Caesar salad. Ice cream sandwiches made with home made cookies for dessert.

    Mine too. But 1 on low gets me closer to 250 but I’ve not cooked a slab of ribs on it. I’ll keep an eye on this. I would consider wrapping to keep the time shorter (avoid the stall).

    Could be. Had an E6 for a number of years but I almost do no smoking anymore. I mostly grill. E6 was on the big side for 2 but was truly a wonderful kamado style cooker and crazy efficient. It went to a very happy home!

    Charcoal Question for the WSK E6

    I have used 2 charcoal grates. Put smoking charcoal on the lower charcoal position. Use the minimum you need to do the smoking. Then put the other charcoal grate in the upper position and had hot coals to that. Pop on the grate and sear on. That was partly why I bought the second charcoal grate….

    Started warm up with 4 burners on high till lid temp was 450 (~10 minutes). Turned off 2 left burners and turned the other two to sear. Waited about 5 minutes then added steak.
