    Brisket and Pork Shoulder same time on WSM 18

    Hi, Any problems doing both at the same time? Is it ok to have one dripping on the other? WOuld you put foil on top of the top grate? Would you put the brisket or the pork on the top rack? Thanks!

    WSM 18" just arrived!

    Over the moon, can't wait to fire her up. I will be doing brisket etc for the first time on Saturday week. What thermometer probe would you recommend? Are they all reliable, ie: any would do?

    WSM 18.5" only option in Oz, is it big enough?

    Sydney, Australai via Dublin, Ireland!

    Hi, New to the forum, work in IT living in Sydney originally from Ireland. Have a Weber Q bbq, doing homework on buying a smoker to move into some smokey American BBQ (slow-cooked brisket etc). Hoping to get some advice on buying a smoker and doing some smoking here!
