    I do pretty much like BFletcher. Just dust, no sauce. My temps are between Pegged and 500. Don't flip, don't open lid, just rotate every 15min or so.

    I at first picked up an old Patio umbrella with stand that someone put by curb, it worked fine. Had a few holes in it, but no big deal. Then recently, I picked up a EZ-up at a yard sale super cheap. It works good and more compact/easier to move, because I only use when there is a chance of rain.

    Don't mess with success! But, I just use a pizza stone that I put foil over in place of water pan. See others just foil the bowl for easy clean-up, with no water. Some add sand to bowl, etc.

    My suggestion is to at least get a dual probe model. Plenty of info on here as to which choice. I would spend more, because you don't want to "upgrade" down the road and lose money at first. "Buy quality and cry once— Buy cheap and cry forever"
