    Pork Spare Ribs on the 26.75" Weber with Slow N Sear XL

    Smoked them for 2 hours @ 275 then wrapped in foil for 1 hour @ 275, removed from foil then back on the grill (brushed with BBQ sauce at this time) left for another 15-20 minutes and done!     1st cook on WSM 22.5" - Ribs

    This is my first cook on my WSM 22.5" - I love this smoker! I used Killer Hogs BBQ Rub, they came out tender and juicy, I need to learn to gauge by sight and feel and not by time, they could have came out a little sooner, but heck that's how we learn.
