We've got WOOD to look forward to....

I want one! I bought the kettle and not the performer because I wanted the old-school simplicity but have basically regretted it ever since. I WISH it had a table! I might have to build one of these. I'm thinking I'll get out my chainsaw mill and cut a thick slab for the top though, to give it...

Who still has a Char Q and loves it?? (besides me)

Tom, did you end up getting the Char-Q? If so, what do you think?

Observations on 1st Butt and my WSM

I absolutely love a good pulled pork, and that's also what I've found to be the easiest, most consistent thing I can do on the WSM. I rarely put a sauce on it, normally the rub gives it an outstanding flavor so all I do is pour the juice that comes out of the foil while it rests over the top...

Who still has a Char Q and loves it?? (besides me)

I would LOVE some side tables for mine, I must look into them...

New 22" premium kettle, I'm officially addicted to BBQ

Bacon wrapped tater tots are right up her alley! We love bacon and I'm pretty sure she would eat some sort of potato product at every meal if she could! Ha! And don't get me going on the shoes, I'm pretty sure there's 4 pairs of running shoes alone... She's pretty good about it, neither one of...

New 22" premium kettle, I'm officially addicted to BBQ

Rich, my wife and I are basically glued at the hip. When it comes to hobbies and activities we usually do everything together and I quite enjoy it that way. After all, the reason I married her is because there was no one else I'd rather spend all my time with. BUT, I think Bruno nailed it. The...

What To Do With a Pork Loin Rib Half???

Don't hold me to it, but I think that was the same cut I watched Steven Raichlen make on youtube. Pretty sure he cut the loin off when it was done, then sliced into chops... Good luck, should be fun!

New 22" premium kettle, I'm officially addicted to BBQ

So after joining this forum I've become and addict. I really enjoyed grilling and smoking previous, but I have SO many more ideas thanks to you good folks. Well my one limitation was my charcoal grill. My little Char Q isn't nearly big enough to accomplish certain types of cooks (one of which...

    First Brisket on 22.5 WSM

THIS ^^^^ Rusty, sounds like you're in the same boat as me. Wife complains about how long it takes for the Genesis to warm up, never mind the charcoal grill. I'd love to do charcoal every night, but until I quit my job and be a stay at home husband, not going to happen. Mick, it's 6:30 in the...

    small brisket flat

I've done a few 3-3 1/2 pounders, had them done in 4 hours foiled, and sometimes they take up to 6 hours if you don't foil at all. That's running 225-275*. I try for more bark so I don't like to foil them personally.

    Stubb's Briquettes Clearance...

Select stores in central New York have it still for $4.99. I had to search a few by my zip code to figure out which ones, but I bought all 10 bags they had in Clay. Between that and what I already had, I should be good for the summer. It's a good deal for quality briquettes.

    Silver Maple as smoke wood?

I've got silver maples all over at my place. Some people call them swamp maples around here. Everybody tells me that they're basically useless and after dealing with it I can see why. The firewood dries out and ends up about as heavy as cardboard, I guess you can use the sap for Maple Syrup, but...

Where do you keep your smoker/grill?

I keep my WSM and Char-Q in the garage or shed (covered), but the EP-330 lives in driveway alongside the garage currently (covered). If the driveway was paved, you bet your hind end it would get rolled in the garage every night. I get attached to my stuff and tend to keep things for a long time...

    New WSM owner having problems

This makes me so glad I did the gasket kit before I started using it. Never had it even remotely want to stick.

    Minion method starts and taste?

Exactly what I was thinking. I find certain charcoals clearly have more of an odor/taste than others.

Who still has a Char Q and loves it?? (besides me)

I've owned a Char Q since the early 2000's but I never even used it until the summer before last. It was a birthday gift from my mother and to be honest I didn't know what to think of it. I grew up being familiar with the Weber kettles but this thing was just strange looking, almost like cheap...

    New from central New York

Yes, I ran a solid 225-245 all day, foiled it at about 150*, pulled it about 195-200 and let it rest in the cooler for 2 hours. Fell apart beautifully and tasted spectacular. Only my second smoke with the WSM. Learned a lot on my first one and hopefully only continue to improve. I enjoy all the...

    New from central New York

Hello everybody, new member from Cazenovia, NY. I'm up to 3 Weber products now and recently stumbled across this forum while looking for some cook times for the pork shoulder I smoked today on my 18.5 WSM. FYI it turned out spectacular! Looking forward to learning a bunch from you. Thanks!
