    20# Brisket

Nice looking brisket! And it sounds like y'all had a great family gathering. I've yet to cook brisket on my pellet grill, and it may be a while longer. I glanced at briskets at Sam's the other day, and they were $100 or more for a decent size choice grade.

    Smoke fire chili.

It's 8:00 a.m., and I just had a bowl of cereal, but I could eat a bowl of that chili right now. The only time I buy Fritos is for chili, and it's almost a must have.

    Searwood 600: Ribeye Steak

My usual method for steaks is dry brine a couple hours or so in the refrigerator and add fresh cracked black pepper when ready to cook. I use the Genesis with Grill Grates (flat side), preheat to get them pretty hot, then put steaks on with lid open to sear a crust on each side (about 3...

Rotisserie: trying to retrofit older Genesis kit to a Searwood

OneGrill wrote back and said, "If you only need the bracket our 4PB19 bracket should work." Order placed. We'll see if it works. Tip for others fooling with similar issues: I have a OneGrill motor (for Genesis) and a Weber motor (for kettle rotisserie), and the slots where the motor slides...

    Searwood 600: Rack of Lamb

We make them a time or two a year in a huge batch, eat several, and freeze the rest for later.

    Searwood 600: Rack of Lamb

I have cooked many racks of lamb indirect on my kettle, with some chunks of cherry in the charcoal. I used to get two racks in a package at Sam's for about $25. Now you get one for that price. Dry brined one for a few hours in the fridge, then hit with cracked pepper and garlic powder before...

Rotisserie: trying to retrofit older Genesis kit to a Searwood

Well, I tried it, but it doesn't quite work. When I twist the bracket to line up the motor/hole with the spit, the front of the bracket hits the spit just before it gets where it needs to be. This is as close as it will get.

    New Glow Plug for Searwood

Meaning the original glow plug on a Searwood?

Rotisserie: trying to retrofit older Genesis kit to a Searwood

I don't know, but I'm going to try that later today. Thanks for the suggestion.

Rotisserie: trying to retrofit older Genesis kit to a Searwood

The "old" spit fits The old bracket does not put the motor where it needs to be for the Searwood. So I think the spit I have may work if I can just get the correct bracket for the Searwood, which will hold the motor in the right spot.

Rotisserie: trying to retrofit older Genesis kit to a Searwood

The holes in the bracket for the mounting bolts are fine. I mounted the bracket on the Searwood today. It just doesn't put the motor in the right place, and it's way off, so a different bracket is necessary.

Rotisserie: trying to retrofit older Genesis kit to a Searwood

I have a new Searwood 600 (not XL). I have a rotisserie kit for my old Genesis (Model No. 86631001, bought in 2016 just before a model change). Google AI says the roti kit for current Genesis will fit the Searwood, but the kit for my older Genesis will not. I put my old spit rod on the...

    Customer Service

Good to hear. I've only had to call a couple of times, about a gasser, and both calls were many years ago. One call resulted in a no-questions-asked new shroud/lid to replace one that got rusty deep into the warranty. The most impressive thing was it was on a weekend, and they answered the...

Searwood 600: St. Louis and Baby Backs

Some very good ones. Thanks for the tips on temps. I'm definitely going to use higher heat next time. I've also checked grill temps during another cook, and it seems the Searwood is cooking fairly lower than its screen indicates.

    Another grill space brainstorm

Jonas, I had a 3 burner Spirit for many years, and it was fine. Then I got a good deal on a new Genesis 3 burner that also features a sear burner and a side burner. Gave the Spirit to a friend. The Spirit was fine, but the Genesis is soooo much better. It's one of the best purchases I've ever...

    Turkey Time is coming.

I wish I had more freezer space to take advantage of the bone-in turkey breasts that go on sale in Nov-Dec. Those babies are great on the smoker. I've even managed to balance one on the kettle rotisserie.

    Genesis knobs and switches

There are new grills in Lowes right now that aren't as clean and pretty as the one in that last pic.

    Carne Asada Tacos

Beautiful pics. Lots of color. Good Spanish/Mexican rice is underrated. I have a terrific Cook's Illustrated recipe, but it is quite a project, so I seldom make it. This may inspire me to tackle it again.

    Some TT's coming up

Nice looking tri tip. We used to never see the cut around here, but it's been showing up lately. I may have to try it on the pellet cooker while I'm in experimenting mode.
