    I use a cooler to thaw - ususally do not have room in fridge. Yes, the brisket goes right into the oven with the plastic wrap and the foil - keeps it moist and the plastic wrap is supposed to be good to 500 degrees, but I only had the oven at 200.

    Wsm or kettle?

    I make pizza all the time on either the kettle or the gasser to keep from heating the house up, but also because they come out great and it is another reason to grill! I use a ZaGrill Pizza cooker in both with great results. They come out perfect.

    4 beer butt chicken, man they came out great. 350 degrees for 1:15 with apple wood for smoke. Two with a pepper garlic rub and two with salt free chicken seasoning.

    Brisket - What size is perfect for WSM?

    I have been able to go up to 14 lb briskets. I have two pieces (one for each rack) of a 2x4 that I cut about 10" long and wrapped in foil. I bow the brisket over the 2x4 until it shrinks enough to fit. Works great for me.
