    my 1st "catering" job

    my friend is having a party for his boys 2nd b-day and i'm fixin enough pulled pork for 20 adults starting saturday night... pickin up 3 butts tonite and a couple bags of R.O. lump (though i may try rancher, haven't decided)... gonna try to keep it simple and just do mr brown's for this though...

    Wanting to try one.... Turkey

    i'm kinda wanting to try a smoked turkey before t-giving to see how it will be when family comes over... i saw a recipe for an Apple-Brined turkey i'd like to try but the recipe wasn't real complete and i'd like to get a few more details like how long or what temps i should be cooking it at...

    first go at mr brown

    bought a couple 7lb "bone in" butts last night, got 'em trimmed and ready to go... put the rub on 'em this morn before i left for work and stuffed 'em in the fridge... at this point I'm committed... i love that... two mr. brown's goin in for the smoke around 10-12 oclock this evening for dinner...

    very impressed -> wicked long burn time

    so.... i loaded up the WSM with coals at about 10am yesterday morn to prep for ribs to be ready to eat at about 5-530pm... dumped a small amount of lump in the ring, filled a chimney (a small generic one), fired it up and once they were good and burning i dumped it on the small pile, covered...
