    first butts

I am a CofC grad myself. I was in Charleston about a month ago and found a new BBQ restaurant (well new to me that is) in West Ashley that was excellent. It is called Home Team Barbecue and it was by far one of the best Q restaurants that I have been to in and around Charleston. Definately...

    first butts

T, Where in South Carolina? I am from Charleston but now live in Northern Virginia. As far as the wood goes if I was going to use a mixture of the wood you have on hand it would be either the pecan and apple or the hickory and apple. Just my two cents but I think the pecan is similar to the...

    Cheerwine BBQ Sauce

I long for Cheerwine. I grew up in Gastonia, N.C. and lived on the stuff along with RO's BBQ and Black's BBQ. I live in Northern VA now and have to drive about a half hour south to get my hands on some or I rely on friends and family to bring large quantities anytime they are passing through...

    New (Old) Performer Pics

Thanks for all the help guys. I finally was able to take some pictures of the new addition. I have not had a chance to do any clean up yet but even so I think the grill is in superb shape. Jeff, I paid $90 for the performer. $90 seemed steep to me but given the condition of the grill (and...

    New (Old) Performer Pics

Thanks, Craig. I picked up the Performer tonight and it just fit into the Highlander. I am pretty excited about its excellent condition. It is a 2003 (DT) model. Can't wait to fire her up! Sean

    New (Old) Performer Pics

So I am picking up a older style Performer (stainless) that I found on Craigslist later this evening. Does anyone know if the old performer has the same dimensions as the new performer? I need to load this thing into the back of my Toyota Highlander some how and I think it might just fit...

    Butcher in Northern Virginia?

Tom, So I checked out the international market you recommended for whole briskets. They were on sale today for 1.99 per pound. I could only find select, but I suspect that is the only thing they carry. Still, a great little find. Picked one up for a smoke tomorrow. Of course my two year old...

    Butcher in Northern Virginia?

Kent, Where exactly are you located, I am in the Seven Corners area of Falls Church. Outside of the Halal butchers, which are in relative abundance (no pork), there is Springfield Butcher shop. It is located at 6816 Bland St., 703-245-0111 (Springfield, VA). Pricey - yes, worth the drive -...

    Maple Sugar in Rubs

So I am experimenting with the use of maple sugar (home made) in a new rub. Anybody know at what temperature maple sugar burns? I can't seem to find this information and was hoping someone might have the answer. Thanks. Sean

    La Caja China

I am looking forward to some reviews of the smoker attachement as I would really like to give the La Caja China a try for a whole pig (no matter how hard that I try I can't stuff a whole pig on the WSM). Anybody have any other views on this piece of equipment other than the obvious lack of...

Temperature Difference in Butt (quick advice appreciated)

Thanks Gary. Yes, I just wrapped in foil and will wait and see what happens. I did try and wiggle and it was not ready to pull out (some of the stuff we write really sounds funny). Of couse, in the end, how bad could it be right!

Temperature Difference in Butt (quick advice appreciated)

Thanks for the quick reply Larry. Yeah, I'm not sure what is going on. The butt itself is long and was fairly mangled on the side without the bone and was almost sliced through. I'm not sure what happened to it. Anyway, it is about 8 pounds I have a six pounder beside it. The six pounder...

Temperature Difference in Butt (quick advice appreciated)

Need some (quick) advice. Anybody ever run into a situation where a butt had about a 30 degree temperature difference in which the highest temperature is 195 and the lowest is about 165 (bone side). I thought about just cutting the butt and leaving the 165 portion on the smoker but I a afraid...

    StokerLog Version 4.0 Preview

Dave, Dave, You mentioned that you were able to use your BlackBerry to check on the stoker application. I have tried everything and only get a "time out" error message. Any suggestions? Anybody else been able to access the stoker application web page with their BlackBerry? Thanks. Sean

    Cook Schedule

I am providing pulled pork for a friend's birthday party on Saturday evening but I am operating under a tight schedule until then. In prior situations I have prepared the pork a week in advance and immediately vacuum sealed and placed in the freezer. This time, however, I have been asked to...

    Pulled Beef

Kevin, thanks for the sauce recipe links. I think I am going to try the recipe from the first link. On the chuck roll search front I finally had some luck finding one but it is a monster....25 pounds. Because it will not fit as is I am going to cut it in half and smoke on the top and bottom...

    Pulled Beef

Any recommendations for a good finishing sauce for pulled beef? Also, does anybody from the northern virginia area have a good source for chuck rolls? I am a member of BJs but I never see them in the case. Sean
