    Tri-Tip Help

Costco sells tri-tip, though they almost always cut it into strips. That said, you can ask at the meat counter for the uncut tri-tip in the original cryovac packaging, which they will provide (though you may have to buy several at a time). I've also seen small tri-tips at Trader Joe's, though...

A word of caution!!! Today is not my day..A WSM disaster:(

I posted about this problem a while ago. The brackets for the top grate on my 18" WSM were not quite long enough to hold the top grate securely. That was the case with two of the brackets that were opposite one another, but not the other two (the middle section was probably ever so slightly...

    18" WSM...Top Grate Too Small?

As I mentioned in an earlier post, I, too, had this problem with the top grate (it was ever so slightly too small, so that it would fall off one of the grate supports if it was pushed all the way to one end). After reading through this topic, as well as an earlier thread, I decided to measure...

    18" WSM...Top Grate Too Small?

There were some posts on this a while ago. I have had similar problems with my top grate.

    Natural gas vs. propane

One other point on gas grills (natural or propane). One big advantage -- aside from the convenience -- is that gas grills tend to have a larger cooking area, which gives you more surface area in which to cook. That said, even the hottest gas grills are not quite as hot (at least in my opinion)...

    Natural gas vs. propane

If you can run the gas line to your grill, I would highly recommend it. We have a Weber Summit Silver gas grill (a 4-burner grill) hooked up to a natural gas line. We ran the line as part of a larger gas project (including installing a gas fireplace). The cost is worth it. You will never...

    Source for wood chunks?

I have used vamtnwoodproducts as well -- very easy to deal with, and very fast shipping. He is in Southwest Virginia, as I recall.

I use a Petzl headlamp -- it is very bright, and wherever I look, there is light. Petzl Headlamp

    Thinking of getting a Rotisserie...

I use a rotisserie, mainly for chicken (particularly Huli Huli chicken). It does make for a juicy bird. At first I didn't use it a lot, but I've gotten more comfortable with it and, hence, have used it more often as of late.

    Cover your rig!

I have an extra cover for my 22" OTG. I use the cover that came with my smoker (18"), and then throw the 22" cover on top. With both covers (and being sure to close the top vent), I haven't had a water problem.

    First Time "Catering"

Success! Notwithstanding an evening of snow, sleet, and cold, hard rain (all night long), I made five pork butts (nearly filling the somoker to capacity, though I probably could have squeezed-in a sixth). I did need to add some additional (lit) charcoal after about 9 hours (perhaps because of...

    First Time "Catering"

So, I volunteered to bring some pulled pork to my office's holiday party. I'm contemplating smoking 4, and perhaps up to 6, butts. The most I've smoked at once before is two. What differences, if any, should I be prepared for? I assume the time, amount of wood, etc. should remain the same...

    Baby Back Ribs Membrane

I also saw in the Costco Connection magazine that they are removing the membrane from their baby back ribs. I am smoking some spares that I purchased at Costco over the weekend. The membrane was *not* removed from the spares. It is interesting that Costco's suppliers are removing the membrane...

    Baby Back Ribs Membrane

Agreed! And tonight should be just as nice. On the menu this evening -- spit-roasted Huli Huli chicken. No smoke, but still a live fire.

    Baby Back Ribs Membrane

Well, the ribs were great. And no membrane . . .

Not enhanced (I hate enhanced pork). They'll come off the smoker soon -- can't wait.

    Baby Back Ribs Membrane

    Baby Back Ribs Membrane

I haven't made ribs in a while, and was struggling trying to get the membrane off the back of the ribs, before I relized that the membrane had already been removed (I think). The baby back ribs were from Costco (Swift). In the past, I've always had to remove the membrane myself. Anyone else...

    top grate stability?

I have a 2009 18" and have also noticed that the top grate has to rest "just so" on the supports; otherwise, it is prone to tipping over as you describe. A slightly longer support would solve that problem, but may make it more difficult to install the water pan and lower grate. So I just have...

Someone please confirm '09 18.5 WSM char grate dimensions

Not to add confusion, but . . . I registered my new 18" WSM over the weekend. I asked the (very nice) customer service representative about the grate. She had not heard about a design modification for the grate (and I was the first person she encountered that asked about it). She then took...
