    Brisket from the WSM 18

    Nice job mate! I’ve done 3 briskets in 2021. If I had to guess, 8 or 9 to date. 2 of the 3 I smoked this year were purchased from Wal-Mart. Choice was the grade on both and purchase price around $50 for 24-18 lbs. The 3rd p.m. brisket was purchased from Snake River Farms and was an 18 lb Wagyu...

    Grilled Corn in the Style of Oaxaca

    I make mine a little different. Specifically, we put Mexican Crema on ours. If you’re unfamiliar with Mexican crema is also called table cream and gas the consistency of a runny sour cream. I like to drizzle it. I also crumble Feta cheese instead of Mexican cheese. I also drizzle melted butter...

    First Brisket advice

    my vote goes for a full packer...I've done maybe a half dozen. I like the way choice tastes over select. Haven't been able to buy Prime yet but one day will If you don't have that many eaters, buy a smaller one. About 12 lbs. is the smallest packers I see in stores and I usually buy my...

    Made a Rotisserie Ring for the 14.5

    Good Stuff Robert! I had an idea you have access to equipment the rest of us can only dream of using. And you're right when it comes to the quality of Cajun products...we can't make this stuff in our basements, well, you can, the rest of us?...not even hardly Your latest rotisserie chicken...

    Made a Rotisserie Ring for the 14.5

    ~~~Clearly you used some sort of a welding rig to put this together, but would you be so kind as to detail how you made it. In doing so, perhaps your testimonial will spark the necessary creativity in one of us, so that we may follow in your footsteps=:-)
    Made a Rotisserie Ring for the 14.5
    ~~~Thanking you in advance! ~~~the ring I inquired about with Cajun was for a 22" grill. It really wasn't that much more <$$$> for the rest of the kit, but like I said, I have the rest of the kit... What are these, like $150 from Weber for the entire kit?...I should probably just buy one...

    Made a Rotisserie Ring for the 14.5

    No problem Robert, but if you ever change your mind...I would definitely be interested. Aesthetics aren't important to me, and I could easily spray some high temp black paint, as far as that goes it's kind of a shame for me to have this spit, motor, motor bracket, hooks, on and on, and not be...

    Made a Rotisserie Ring for the 14.5

    Very nice!...any chance you will make others and offer them for sale here?...I could use one I have the spit, motor, etc., but no ring... FWIW, I have a 14.5 WSM, and a 22" Performer...could use it on either or. I think I'd prefer one for the Performer since it's got more length, but I...

    Smoked a Picnic Shoulder 3 days ago...used the Reknowned Mr. Brown Rub

    I smoked a shoulder (6 lbs. after removing the fat cap) a few days ago and stuffed it with Prosciutto and Capacolla slices, after sticking a 6" boning knife into the shoulder in a bunch of spots, gouging it to form tunnels, then stuffing the slices into it For the rub, I used the Reknowned...

    Thinking of modding a gas rotisseire kit for my Weber Charcoal Grill...thoughts?

    ~~~Thanks for mentioning this Greg...I forgot to mention I sent them an email asking if they sell the Weber ring and motor mount. Since it's Sunday, I figured they were closed so no phone call from me
    Thinking of modding a gas rotisseire kit for my Weber Charcoal Grill...thoughts?
    ~~~When emailing with Weber, the first rep that got back with me told me they would not sell the ring to me for my project, so I wrote back asking what if I bought the entire kit and by misfortune, the ring and motor mount somehow became unusable. Another rep replied and said, in that instance...

    Thinking of modding a gas rotisseire kit for my Weber Charcoal Grill...thoughts?

    Thanks for the testament Steve=:-) I guess my Scottish frugal nature is taking over on this purchase, it's just that I am having a hard time justifying spending $120 + shipping for only the ring and motor mount, whereas $30 more buys another motor, spit and forks, yet I don't need those items...

    First Smoke on my WSM 18"

    let us know how your chicken comes out Malvin! Last summer I was cooking a lot of whole chicken for one of my dogs. Long story short, she had health problems and the vet we used said to feed her a lot of protein meat, so I was brining and smoking whole chicken for her to last for a few days...

    Charcoal Ashes

    ~~~our county cooperative extension service offers a free PH soil check. all they ask is that the soil you bring them has been dried and sifted free of debris like pebbles and rock, so what I'll do is to sift the soil from various parts of my garden by using a window screen from the garage, let...
