    Repair or Replace?

Better to have it and not need it, than to need it and not have it. That's the lesson that I learned.

Small metal trash can with locking lid for ash after cook.

I just use a small metal bucket. I empty the ash the next day, leave it there in the bucket for a few days to ensure that the coals are extinguished, and then I dump it into a plastic garbage bag, and into the trash can it goes.

    Grill Capacity --22" Kettle

The dinner is Saturday, December 7th. Right now I'm doing the Tasmanian dance to honor the Sun God so that it won't rain that day.

    Grill Capacity --22" Kettle

Yeah, I also counted 39. Maybe that's it. I keep jumping between using my kettle, and using my pellet grill (GASP!). I've been wanting to use my kettle for a cook this size; but, the weather here on the space coast is unpredictable -- my pellet grill in in the lanai, so it's kinda sorta...

    Grill Capacity --22" Kettle

Hello: Next week I'll be cooking 20lbs. of wings (cut up, flat and drum, no tips). I have a 22" kettle with the gourmet cooking grate. I'll be using a vortex. What's the max number of pieces that will fit on the cooking grate? I figure around 80 pieces, if I make a double row going around...

    Just curious

I stopped doing that. I found that I was getting inconsistent temp control, more so when using the partially-spent coals, than when using all fresh briquettes. Also, I noticed a drop in max temp right from the beginning. As to cost savings, I alternate among my barbecue/grilling equipment --...

    What’s the best quality ribs?

I never used Smithfield anything. I buy ribs at BJ's, and sometimes from the local supermarket (Publix). I also bought ribs from Omaha Steaks and from Snake River Farms. If I was putting them in order of quality, it would be 1. SRF; 2. Omaha Steaks; 3. BJ's; 4. Publix. I also had ribs from...

Rusty old WSM 18.5...Worth the hassle?

If you're handy with tools, and you have a game plan in mind, which, it seems, you already do, then go with it. Other hard-core grillers and smokers have done really well restoring almost dead WSMs and kettles. Go for it, and have some fun. It's worth the hassle if you want to do it. Having...

    One-touch cleaning system on WSM...not.

I didn't know that the WSM had the "one-touch" cleaning system.

    New Vortex??

If I use a full chimney of briquettes, the cooking grate actually ends up resting on top of the lit coals until they burn down a bit. So, I use maybe 3/4 chimney.

    WSM vs smoking in kettle

The only time I'll use the kettle for smoking is if I have something that doesn't require a long smoking time, e.g. less than two hours. And that generally doesn't happen very often. I'll use the WSM for ribs, pork butt. I recently started using the WSM for meat loaf and chicken. Most of the...

304 Stainless Steel Bottom Cooking Grate for 18.5" Weber Smokers

The lower cooking grate on my WSM has handles. I see that the replacement that you're commenting on does not have handles. Do you consider this a negative, or a non-issue?

DISCONTINUED: 304 Stainless Steel Bottom Cooking Grate for 18.5" Weber Smokers

The lower cooking grate on my WSM has handles. I see that the replacement that you're commenting on does not have handles. Do you consider this a negative, or a non-issue?

    Genesis 1000 Refurb

This appears to be the exact same model that I have. Over the years I've replaced the cooking grates, the flavorizer bars (several times), the burner assembly. I replaced the OEM lid thermometer with a thermometer from TelTru. I changed out the hose that came with the grill to a hose that...

Weber Grills: Why Do You Have What You Have?

Lew: Do you figure that you'll ever "replace" any of your grills, or will you just add to your collection?

Chicken On The WSM - With or Without the Water Pan?

Hello, Everyone: I apologize for the short notice. I'm doin' chicken parts on the WSM. With or without the empty water pan? The lined water pan will help with the clean-up. BUT, without the water pan I figure I'll get higher temps, and maybe a more "charcoal" flavor -- when the drippings...

Weber Grills: Why Do You Have What You Have?

I feel like the baby of the group, having fewer setups than all of you. I have a Weber Genesis 1000; a platinum kettle; a Jumbo Joe; a WSM (18.5); and a Camp Chef propane smoker. The Genesis was the first Weber grill I purchased. I got the kettle back in 2011 or thereabouts in an effort to...

    Finally nailed a brisket!

So, I'm not the only one who's 0-for-3 with brisket. I won't say that misery loves company. I WILL say that I hope to learn from your experience. My 4th attempt is on my to-do list for 2017.

New for 2017: Weber Genesis II Gas Grills

I was getting ready to buy a new Genesis; but, at over $800 it ain't happenin'. My Genesis 1000, with new innards, still does what it was designed to do. I think I'll be keeping a lot longer than originally planned.

    Thermometer Upgrade

Bob Bass: I'm a bit nerdy in that regard, i.e. comparing readings and such. But I never thought about comparing readings between the factory-issued thermometer and the Tel-Tru -- now I have a mission to accomplish. What I WILL do is to compare the readings from the Tel-Tru to the readings on...
