Carne Asada - continued amazing weather in kalifornia

ChuckO where did you get your grill insert? I've only seen the ones Weber is making that is a smaller insert to a regular grill grate. I use my grill at tailgates & this would make it so much easier for cooking similar dishes for the masses

    contest butt timing

I'm doing a contest timing on butts/ribs this weekend on a friends 18 wsm that I'm going to borrow for a contest in a couple of months. This smoker will be the butt/rib cooker for me & I think I've got a pretty good handle on rib timing but he's not done a butt on it so doesn't have any timing...

pros/cons of Smoke EZ & Cajun Bandit

I'm thinking of getting one of these for my Weber OTG 22.5 but can't really decide which path. Of those that have them what are the pros/cons of each?

    Bbq documentary:American smoke

I'm not sure if this will ever come out since that preview & all the info was from summer 2012. I'd be nice if it would finally make it out though

Alabama Comp Help, Joining Someone's Team (Maybe!)

Yes it would be just you & I unless my regular teammate gets back in but w/ 2 kids in school & a wife that's unfortunately not likely soon. You're welcome to stop by at Stokin in Aug & I can show you the ropes then. I would suggest to walk around a event like Whistlestop contest in Huntsville...

Alabama Comp Help, Joining Someone's Team (Maybe!)

Being that you're from B'ham, Sloss's Stokin the Fire held in late Aug (look for info on the Sloss website) might be something you'd be interested in. It's a backyard only event ribs, chicken & maybe a people's choice butt. I've competed in it for the first 2-3 years but have judged it since. I...

    Injecting Boston Butt

I've done the Chris Lilly injection but find there's not much need for it as there's plenty of intermuscular fat to keep it moist that injection isn't really needed other than maybe to get some flavor deeper into the meat for a contest but not needed in family backyard smokes.

    New meats at Sam's Club

At my Sam's when I bought a pack back at Xmas, it was a 2 pack of Smithfield but it just may be a case of who had what when Sam's placed the order as I'm sure they buy from both on a regular basis & neither has exclusive rights. They turned out rather well & I've always liked either IBP or...

    Transporting WSMs to comps.

If you can't fit it inside your Jeep, if you've got a hitch you can get one of those hitch haulers instead of a trailer. You might have to bungee them real good, use some kind of duct tape to keep them together or use a cargo net over it to keep them from falling off if you have bumpy ride. You...

What are you smoking for the apocalypse?

Well since you're doing the Myron way, you need to inject the **** out of it so it doesn't dry out during the cooking process & it'd probably be done before you even started :wsm:

    Prime Rib Roast help?

Out of all the rib roasts I've done on my BDS, I've never had a problem w/ it being oversmoked even when I used mesquite as it's not in the smoke long enough to become oversmoked unless you do it low & slow. I converted a oven recipe to smoke doing the cook at approx 325-350 for a couple of hrs...

Peach Wood from Fruita Wood Chunks

Can't say for sure but I've heard that if you clack 2 together you can tell by the sound. If it's kinda a dull thunk then it's still on the green side but if it sounds more like a whack of a bat hitting a ball then it's dry. 2) on pork any fruit wood is probably good but I've become a convert...

    cajun bandit conversion kit

Thinking about getting one of these for my 22" OTG Kettle & have done a little looking around for info (surprised I didn't see Youtube vids) but looking for some thoughts on those that have them. How is temp control/time of burns w/o using a guru of some kind? Worth the $ vs waiting on getting a...

First Comp with KCBS Judges. Long rambling post

Good & never get intimidated by all those $$$ smokers as you found out. At our first backyard contest, we saw the same thing & some guy was talking that he did this catering & that catering & he had this big offset smoker that had hydraulic winches to lift the lids & we had the 2 ECB so we just...

    Which canopy/tent is best?

The best I've had are the EZ Ups that have the internal bracing (Express II line IIRC). I've had those get blown over but due to the framing they just flip over instead of collapse. I've had 3 of the Weekender brands & all have collapsed at one time or another one of which was right out of the...

    What grade are Wal-Mart Briskets?

Well if it's like the Wally World near me, it's probably a no roll select grade but you might luck up & they have a choice grade. No roll, if I understand whats been explained to me, is that the packing house doesn't pay for the USDA guy to stamp it so it ends up being cheaper meat but quality...

Do you usually break even on cost at Comps?

I'll 2nd what Russ said. Just get it in your head that you'll never break even at contests regardless of how well you do all things considered & even those that win consistantly like Myron will tell you that & just have fun doing it instead treating it like an expensive hobby. If you want to...

    lighting

If you're looking for some bright lighting to work by, use one of the portable 100w+ halogen flood lights (over in the lawn tool section of most HD/Lowe's) or if just some general lights I'd use rope lighting of some kind
