    Hi All, So it was 10:30 PM and I took out 3 slabs of completely frozen uncooked back ribs in cryovac and put them on the kitchen countertop and the temperatures were around 75 degrees. Fast forward to 6AM (not saying I forgot about them or fell asleep) and the ribs were completely defrosted...

    slim cut spare ribs

    Thanks Rondo... I bought a few pounds to try and I only wish it was what you described. I'm sure different places cuts them differently. My slim racks were the St Louis discards and about an inch of the actual rib. It was a cheap experiment but I don't think I would try them again.

    After Effects of Fish

    Hi All, A buddy just gave me some albacore. My question is if you smoke fish will a fishy smell linger in the WSM? If the smell does linger any ideas how I can get rid of it?

    Just did a couple of chuckies two ways... one foiled and one unfoiled. Each was 2.75 pounds and was smoked for 8.5 hours. The bark was dark but yum and I liked the unfoiled better because the bark was more chewy! Here are some pics: Before going in: Guard dog... All done...

    I bought the weber paraffin cubes and they work wonders. It was something like 20 cubes for $5 and I only use 1 cube per cook!

    Hey all, I bought some small logs/ big branches of apple, cherry, and oak that are about 2 feet long and 3 to 7 inches in diameter. I tried using my pruner for the smaller branches and the branches were to hard so I used my miter saw which worked pretty well. What do you guys use to turn...
