    Trying my first brisket

Actually I'm only smoking a 7 pound flat because I mistakenly thought bjs carried whole packer brisket. I was under time constraints last night or I would have searched out a butcher. Oh well, I'll do a whole brisket next time! Pics when I can get to a computer!

    Birthday butts

I'm smoking 3 butts for my baby girl's first birthday party. They're trimmed, injected, rubbed and went on my 22 WSM 15 minutes ago. Now I need some coffee. Pics to follow

    First attempt at baby backs

I've done plenty of spare ribs, but this is my first attempt at baby backs, and only the second cook on my 22 WSM. Shooting for 275 for 3 hours. I'll let you know how they turn out!

    First smoke!

Made my first attempt at cooking on the WSM yesterday. Smoked 2 beer butt chickens and 2 racks of spare ribs. Overall, I was very pleased! Food turned out great but I started losing heat around the 4th hour. Guess I'll just have to try again next weekend! :)

Why does everybody seem to have 3 or 4 or 5 different grills and smokers?

I've been reading through some posts and a lot of signature lines list several grills and smokers. Please elaborate as to why?

    Greetings from Baltimore

Drove to Springfield Virginia to pick up my 22.5 wsm on Tuesday and can't wait to start smoking on it. Bought it so I wouldn't have as much babysitting to do on longer cooks like I had to with my side firebox cooker.
