Nice job on the butt. Pulled pork is probably my favorite. There is something about getting it up to temp, that crusty bark, and the beautiful way it shreds so nicely. Gotta go pull some out of the freezer.

The goat was not our favorite. It was real gamy. It could have been the meat itself or the shop I purchased it at. I would be interested in trying it again if I can find it fresh.

We were able to get through most of it without any assistance. Very few leftovers since we spent all day hanging out, eating, and drinking. This was probably the best idea my friend has every had.

Edit at 2:40 PM CST. I wrapped the bullet with the insulation blanket and a bungee cord. The bullet heated up so high, it melted the bungee cords. The coats off and the bullet is sitting at 360 degrees.

Coldest day in the last month...16 degrees with 26 mph wind gusts. I am planning on putting the Standing Rib Roast on about 2:00 pm. Darn weather.

Only 5 more sleeps until I get to cook a prime rib on my WVB!!!! That is better than X-mas any day of the week!

7.5 pound standing rib roast at HyVee for $6.99 per pound. The butcher cut and tied it for me. Come on New Years Day!!!!!
