Your going to laugh at me......

I got the 18, because I found a deal for a BNIB 2013 model for $200. When I was initially shopping (before I found that deal), my wife told me to get the 22 as she knows I'll want the bigger one sooner or later. lol. The deal was too good to pass up and so far, I'm happy with the 18. I'm not...

Can I use an oak board for smoking?

If they're clean like you say, yes you can use them. Oak...Red is the best for flavor. From Amaze-N-Products.com According to fruitawoods.com

    18.5 stacker

Well I ordered one...we'll see how it goes. Thanks to Russell for the link. :)

    18.5 stacker

I haven't ordered one yet, but was considering maybe ordering 2...one to cut rotisserie notches in. Shipping's a little hefty at $25 for one and $45 for two. Also, are we sure these fit on 2009+ WSM's? EDIT: After watching Chris' video, looks like it will.

    Ribs

I'm also wondering if he's recommending doing ribs without the water pan installed at all? If it's there, you're not going to get the fat drippings hitting the coals.

    Pickles?

Hi Dave. Thanks for spending the time to chat with us. I have never been to one of your restaurants, but I just looked and there a couple not too far away from me...Thousand Oaks and Simi Valley. I plan to take the family soon. Maybe this Thursday. :D On to my question. We usually buy the...

    Move'rs Dolly on my WSM

It's not the prettiest thing, but it works fine without drilling any holes. One around the back of the leg and one going through the hole in the caster and then around the bottom of the leg. SS ties are not necessary. You could use any old zip tie. SS just blends better and I already had them...

    Move'rs Dolly on my WSM

I have the same casters on mine but didn't drill any holes....just used 2 Harbor Freight SS zip ties on each leg / caster. The SS zip ties work awesome for the charcoal grate mod too.

First Smokenator Brisket Flat on 22.5 Performer

Woah...wish I had seen that first. What gauge is that? Looks pretty thick. 14? EDIT: Just saw 11 gauge. Very nice. Think I'll have one made when he runs out of cheese! ;) Do you have a template or measurements? EDIT 2: Going through the thread, all questions are answered. Thanks again.

    Semi-Sunny Saturday Smoke

Man your yard is awesome Jim!!! Can't wait to hear and see how the butt turns out. I have a butt in the fridge and was going to give Jane's rub a shot soon.

First Smokenator Brisket Flat on 22.5 Performer

So I had a friend that owns a stainless shop make me a Smokenator knock-off in exchange for some smoked cheese. I think I got a good deal. ;) It's not perfect, and in retrospect I would change a couple of minor things...mainly placing the 2 round holes further back so the grate did not cover...

To Foil or Not to Foil

Either way is fine. Most people just prefer to suffer the cost of foil in exchange for less cleanup work. That being said, I've seen people only foil the bottom of their pan and use water in the bowl un-foiled.

    Hot Vent Tabs

Chad - That looks awesome! :) Where did you get those handles? Bob - The red oak will probably work out perfectly. Please show us how you did it when it's done. Regarding the fires. I live in Camarillo where the fires originated, but on the opposite (west) side of town. The winds took all the...

    Hot Vent Tabs

Good question Bob. So far, I've just been quick about it. They can get really hot though.

Off-brand charcoal. Does anybody else do this??

Nope. If it works and has no funny taste, I see no problems at all.

    Cutting Notch in 18.5 WSM

No you do not notch the lid. The only purpose of this mod is to prevent the wires from getting pinched. So no, the lid does not pinch them. See the "U" at the bottom of Chad's notch? The wires rest in there and with the lid on, there is only a small hole visible where the wires pass through...
