    German BBQ????

Mike, If you haven't seen it already, there is a very long thread on making your own kraut. Here it is: Sauerkraut And your right, it does look like a lot of work but also looks very tasty. Bob

    German BBQ????

Bryan, As it turns out, we got invited to two last minute football parties today so the pork will be on the menu for tomorrow. Quick question on timing. How long or to what temp do you cook it before you add the kraut and then how long after. Your original recipe had it for a butt which I am...

    German BBQ????

Okay, forgive me for my pork ignorance. I can find a butt or what is labeled here as a pork loin roast but it is long and cylindrical and does not look like your picture. We have cooked these before but your timing seems really long. Am I looking at the right cut of pork? Bob

    German BBQ????

Bryan, Seriously thinking about making his tomorrow. Read through your link. Question I have is what temp to do you cook the meat too and I assume you just slice or chop instead of pulling? Thanks, Bob

    Butt with Sauerkraut

I could have sworn that someone, Bryan or Kevin perhaps, posted not that long ago about cooking a butt on the smoker in a pan of sauerkraut. I did a search and cannot find the post. Anybody else remember this? Bob

    Charcoal and wood in Chicagoland

Decided to go check out Berger Brother's as suggested since I was off today. Combined with a family visit to the city. Very easy to find as David described. Felt like it was 1959 as you go in the steel door to a little window and put in your order. Very old-fashioned. Got 3 40 lb. bags for...

    Penzey's Help

Thanks to all for your help. I went yesterday to the Naperville location. What a great store. It was as discussed where they had the stopper jars full to smell what you were buying. I loaded up on a number of things suggested by you all and I look forward to trying them. Thanks again...

    Penzey's Help

I have seen many of you rave on here about Penzey's but I have never ordered from them. I just learned that they have a store about 10 miles from me and I may go visit since I am off this week. Here's the question. Their website is a little overwhelming so what are your favorite things from...

    Christmas Eve Ham ~ 2008

Bill, You mention checking your "Nu Temp" but I assumed from looking at your pictures that you were using the Maverick. Does Nu Temp make one like the Maverick that lets you track the temp on both the smoker and the meat at the same time? Bob

    Yet another lump question

Naked whiz gives Full Circle a "Recommended" rating, which is I think one below their top rating. Only thing he didn't like was the number of small pieces in the bag. Here is a link to their review: Full Circle Lump Hope this helps. Bob

    Smoque - restaurant review

Dave, My wife and I absolutely love Salpicon. Have been there probably a dozen times and she had a surprise 40th B-Day party for me there a couple of years ago. Food is awesome, unbelievable margaritas and great service. Our favorite restaurant in Chicago. By the way, it is on Wells a block...

    Tenderloin Help

I got it done. It certainly doesn't look nearly as pretty as the ones I buy from the butcher but I think it will do. I mostly followed the instructions from this site. Very helpful both the video and the comments from you all. Thanks to everyone for their help. I will try and post some...

    Tenderloin Help

I wasn't sure where this belonged so thought I would post here. Not necessarily a grilling question but would love some help if possible. I am making tenderloin for Christmas Dinner with some friends. Instead of buying at my local butcher, I am bought my meat at Costco. The difference in cost...
