How Much Turkey for 35 People?

That's the question. I'm thinking two birds, 15 pounds each. Is that too much? I wouldn't say that we're particularly big eaters, but there will be a bunch of teenaged boys. Thanks

About How Much Oil for a Fried Turkey

I hope it's ok to post a non-smoking question here. I'm going to fry my first turkey this year. I expect it will be about 15-18 pounds. My pot is 8 gallons. About how much oil do you think I should plan for? I know that I need to check by putting the turkey in the pot and filling with...

Thanks for all the advice. Maybe I'll get me some gloves. Although those bear claws look like fun.

How do you pull your pork?

I'm sorry, I'm sure this has been discussed, but I can't find it. Simple question: How do you pull your pork? I've tried the forks, but the pork gets caught in the tines immediately. I've tried chopsticks, but they don't do anything. I usually end up just using my fingers but (1) it burns...

Need Advice on a Chilly Overnight Smoke with the 22"

All good. I put the briskets on the 22" at 6 p.m. -- small one on the lower rack. I put the butts on with them at 7 -- small one on the lower rack. I mostly filled the ring and added half a lit chimney. The temp on the 22 took at while to get to 250* in the top thermometer. But it hung...

Speaking of Knives, how do you sharpen yours?

I use the Worksharp also. It works great, but I find that I get a little divot in the edge down by the handle where the stroke starts. I take my real good Japanese chef's knife to a pro who does it for $4.

Need Advice on a Chilly Overnight Smoke with the 22"

I'm planning a big party this Saturday. The smoking portion will consist of 2 briskets, 2 butts, 4 chickens, 4 racks of ribs. All pretty straightfoward: Trim, rub, smoke. I've got a 22" and an 18.5". (I also have a POS brinkman, that I'm hoping to avoid.) Here's my plan: A brisket on each...

Can this be made a day or two before, or should it be served promptly so that the potatoes are crispy?

New York > Red Hook (North): Max's BBQ

http://www.maxsbbq.com/ Another spot up in Red Hook, Dutchess County. (Not to be confused with Red Hook in Brooklyn.) Very popular place, no doubt due to the beautiful old building and terrific service. The bbq sucks, in my opinion. I've been a number of times: The brisket tastes like it...

New York > Salt Point: Fireside BBQ & Grill

http://www.firesidebbq.com/ Ok, few of you will get to Salt Point in Dutchess County. But if you do, the Fireside is a pretty good BBQ joint. The specialty is the tri-top roast. Usually a large hunk of tender meat. Good ribs and onion rings as well.

New York > Brooklyn: Fatty Que

I beleive the Fatty Que in Brooklyn has closed. There is one in Manhattan -- West Village I think -- that is supposed to be better than the original.

Efficiency of the 22.5 versus the 18.5

Wow. The 22.5 really goes through a lot of charcoal. I started an overnight smoke at 5:30 with about 3/4 of a bag, which is what I used with my 18. By 11:30, most of the coals were gone, fallen through the rack, and the smoker was below 200 at the top. I light and added the rest of the bag...

Old Apple Trees for Smoke Wood? Safe?

I just did a little google search (probably should have started there). From what I found, there are two issues: One, apple (and other fruit) trees naturally soak up arsenic from soil; Two, certain phosphate fertilizers increase the arsenic content in the trees. Apparently, some studies have...

Old Apple Trees for Smoke Wood? Safe?

An old apple orchard near me just tore up a whole bunch of old, dead trees. They're stacked in a big pile. I thought about going by to grab a bunch for smoke wood. I remember reading somewhere that years ago apple trees were sprayed with fertilizer that contained arsenic (cyanide?). Is this...

    Breakfast Sausage Recipe Please . . .

I've been doing a lot of searching on the net for a good recipe for breakfast sausage. I'm thinking of plump, porky, slightly sweet sausage that used to be readily available before even southern diners switched to revolting finger-sized mass-produced "links". I'm looking for a recipe for 5...
