Top things that can go wrong when you cook a brisket.

After reading these posts, I wonder if I’m doing something wrong. I usually do a couple briskets at a time, 13 to 16lbs each at 210-220, no water using a Guru. I Seal a Meal the left overs. The thermometer goes in the meaty thick part. I cook them to 190-195, sometimes one of the briskets...

    WSM Hanging Ribs - 1st Go-Around

Robert: I downloaded a free copy of Sketchup yesterday and started drawing and adding demensions. My son-in-law works at quarry with a welder that will do side jobs. I like your hanging extension: Plenty of room to get the ribs in and sturdy enough to hold some weight. You're right, with the...

    WSM Hanging Ribs - 1st Go-Around

Thanks Robert I learned my lessons with turkeys and chickens sometime back. I'm not a fan of rubber skin so I cook them at 375 sometimes 400. Besides, there's little fat that needs rendering with birds, so why not cook them fast. I put a couple chicken on the Performer rotisserie a couple weeks...

    Mold

I've had my WSM, Performer and a Joe for 5 plus years and never seen white mold on any of my equipment; however, I clean the pan, remove the ash and clean the grils the following day after a cook. I'll leave the old used briquetts in it or move them to the Performer, but the pan and grills in...

    WSM Hanging Ribs - 1st Go-Around

just put down some of the leftovers for dinner this evening and I swear, food always taste better the next day :-). I'll definitely hang more ribs in the future, but I'll use my water pan as a heat buffer (without the water). When I cleaned out the WSM, I was surprised how many briquettes I had...

    How to use "used" charcoal

Nothing wrong with old charcoal Dale, I agree. I use my performer several times a week and my 22.5 WSM once or twice a month doing some 20 to 30 hour cooks with large briskets and butts. I've never had a problem or noticed any taste differences from using used briquettes. The only thing I toss...

    WSM Hanging Ribs - 1st Go-Around

This was my first go around with hanging ribs straight over the coals in my WSM modified pit barrel cooker. My equipment consist of a 22.5 WSM with a BBQ Guru 10 CFM fan, Craycort grill, and the Cajun Bandit Stacker and if needed the Cajun Bandit Rotisserie Ring. I saw the PBC on Youtube and was...

Is there something beside the Maverick ET-732

Greg: I'm thinking about pulling the trigger on an iGrill. My butcher is remodeling so I have another week or so to think about it before my next smoke. Having a second probe is nice, my bottom shelf gets hotter than my top shelf because I cook with a DigiQ and do not use water. I find water...

Is there something beside the Maverick ET-732

Dave: I'm in the same boat, sometimes it is nice to have a second device. I too love my DigiQ DX2: It's flawless. The only improvement I could see the Guru making is a transmitter and remote device to monitor like an Android or IOS app. Sometimes I even use the DigiQ on my Weber Performer. It's...

Is there something beside the Maverick ET-732

That's good to know. I like the Maverick when it works. It's just not durable. I'll check out the other models mentioned.

Is there something beside the Maverick ET-732

Looks like iGrill is compatible with Android. Bluetooth in a concrete house can be problematic. I'll check out Polder and Thermoworks too. Thanks for the quick response.

Is there something beside the Maverick ET-732

All: I’m looking for a better alternative to the Maverick ET-732. After using one for a couple years I’m so done with it. I have a new one in the closet as a back-up and I’m not going to use it because I know I’m still going to be buying probes every six months after they fail without any...

    Suggestions for Routing Thermometer Probes?

A month ago I bought the bigger size so I could hook up my Guru to a Weber Performer. The bigger size easily handles the ET 732 and the probes for the Guru.

My Special Thanks to all TVWBB Contributors and Posters

Yes, I may have embellished a little: Maybe it's the smoke on my clothes that I'm carrying around. :-)

    WSM 22.5 door handle issues

. Here's my fix. Had to drill a small hole, but I have not needed to touch it since.

    Latch fix on WSM door

John: This was my fix. Weber did send me a new door, but I figured it would break again. Now I have an extra latch. To fix my door I used a few bolts, aluminium bar and a few well placed washers: All purchased at Home Depot. It's been working very well. I even have an adjustment for making the...

My Special Thanks to all TVWBB Contributors and Posters

I just wanted to share how thankful I am for this site. I purchased my WSM 22.5 about a year and half ago, and I’m hooked for life. Since my Weber Gas grill had the bottom fall out after 12-years of heavy use, 3-months ago, I decided to get a Performer and I’m loving it. My food never tasted...

    BBQ Guru DigiQ DX2

I cut the hole in mine too. This way I can smoke without the Guru and don't have to deal with the tape. Did the same with my Performer. It looks clean and I never have any problem with the mounting. Love my Guru: Set it and forget it. CraigW

Are temp control systems worth it?

Looking for Some Freedom: Digi-Q Enjoyed reading everyone’s comments about the worthiness of ATCs.I’m new to the 22” Bullet but not new to Weber. Taking from another poster, I pimped my bullet immediately with wheels, handles and ports. Also picked up the new Maverick 732 and added a...
