What do you do for a living? *****

I couldn't agree more Bob. I guess I figured everyone would be doing roughly the same thing and I would be the odd ball. There are people from every walk of life here, pretty cool. I'm still the odd ball, but at least I feel comfortable here! :

    CHICKEN

Good one Travis. LMAO. Corey, there is a page on here somewhere to help you with posting pics. I would give i link but I don't know how to do it and my 6 year olds are now 17 and 13. They are getting dumber by the moment.

    New 22" WSM, totally impressed

Congrats Joel. I was the same way, I cooked on a kettle for a while. You just can't believe how stable the wsm is until you see it in action. Oh, by the way... If there aren't any pics, then it didn't happen!

    Smoked Trout

Great job Daniel. Is there anything that you have to do to your cooker to avoid a fish smell? I have never done a fish.

    Rain and Temp??

My experience is that a steady rain is worse than wind. I see a lot of different views here, so I guess you are on your own. It may not be a bad idea to get a wind screen and umbrella together just in case. Good luck.

Post a picture of yourself! *****

Hey fellas, just a quick note. I did some wild boar and it came out ok. I brined it, but it is pretty lean. Not the best pork I've had, but ok. By the way, I love this thread Wolgast.

    Best method/recipe for Filet Mignon?

I just go with salt and pepper. Lately I brush on melted butter with garlic after each turn...works for me.

Do I really need to get a WSM if I have a OTS?

Hey Jay, there is no question that the kettle is like the swiss army knife when it comes to cooking. You can indeed do anything and everything on one grill. If you can afford it though, I would recommend the wsm for capacity as well as control. I have cooked many butts on my kettle and as good...

    getting excited

Hey Corey. Sorry about your cook. I have been there. I haven't done any of the recipies you did, but I have had problems getting my cooker up to a high temp. I did one of the mods that allows me to put my door on upside down and open it slightly. I use this for chicken, seems to help alot. A...

    Favorite store bought rub?

Lately I have been using John Henry's Apple Jerk on my ribs. Loooooovvvvve it. And I gotta say, Weber's cajun rub is not bad in a pinch.

    help me understand

I'm with ya Corey. My understanding is that the sand, pot, water, etc... just functions as a heat sink to help regulate temps and it may reduce fuel consumption a little. My thing is, the cooker is so stable, and if it costs me a buck or two in charcoal, so be it. I just foil the pan an go for...
