    Found some NY strips on sale at Kroger this week. grilled them direct on the OTG with Stubbs and served with some kale braised in chicken broth. Steaks rubbed with S&P garlic powder, onion powder.

    I have done chicken as low as 225 and as high as 450. The key is to pull it off the cooker when the meat is up to temp. Higher heat will give you crispier skin, lower heat leaves it in the smoke longer and is easier not to over shoot your temp. Adding salt to the skin- lots of it. Will help...

    Last night I did some hand cut chops direct on the OTG around 450 with a simple salt, pepper, garlic, and onion powder rub. Pared it with roasted carrots and a spring salad. Also got stocked up on charcoal at lowes. And some pecan wood from some trees that had to be cut.

    Running it with no water in the pan should help you get to temp and get higher temps. I just foil my bowl, no water or clay. Try playing with your vent settings, also try teltong your lid and lifting it up slowly. I have to do that with my UDS to avoid temp spikes. Never had a problem with...

    New WSM Owner Needs Advice

    I use stubbs, Kingsford, and whatever is on sale. I think the best way to season it is to cook some food. The more you cook the better you will get at cooking and the more seasoned the smoker will get. You are going to love it!! Don't forget to post pics and to add some smoke wood!
