    The WSM 14.5 inch meets my and my wife's needs. I have an "another brand" 16 inch which I use on occasion. However, the 14.5 is my goto smoker.

    Thanks for the comments. Sometimes I think the WSM 14.5 doesn't get due credit. It is as good as the big brothers and is perfect for this kind of a chicken smoke. The bird was wonderful. Had baked beans, coleslaw, baked sweet potato and a wheat roll. Good eats.

    Did this on the WSM today. I continue to be amazed at how these smokers hold a steady temp. 245 degrees plus or minus a couple of degrees the entire cook. Kinda set it and forget it.

    Yes. The 14.5 is a nice smoker. I could peg desired temp the entire cook. I hope temp control is as easy on the 18.5. Also, with the last few smokes on the 14.5 I did not use water in the pan and the meat was as good as using water. Any thoughts on this? Thanks.......

    Good post with a variety of thoughts. My take is that the folks at Weber engineered this unit to be used with water; otherwise, why would they include a component called a "water pan".
