    There should be a decent gap to allow proper air flow. Some people, myself included, bolt or wire the ring to the grate to keep it centered. I added a few carriage bolts that act as handles to lift and shake ash off the coals.

    An extra washer should protect them. Other options: use charcoal baskets to keep coals off the charcoal bowl, or simply dont bank large amounts of lit coals near the rollers. Ive had a few kettles with bales and never had any issues with roller melting but i have never done super high heat either.

    Agreed when ever you're on the fence about quantity, overestimate. Cost is nominal and there is very little extra work involved in cooking an extra peace of meat. It reheats well for left overs and the peace of mind knowing you wont run out is priceless.

    This is the method that Weber suggests in the WSM owners manual. I tried it on a kettle once for my first kettle cook using the pitmaster IQ based on their recommendation and it took FOREVER to come to temp.
