    When I was at the butcher shop all they had were large flats. They suggested against splitting one for smoking. I ended up with a nice chuck roast. Treated just like a brisket. Came out great. Made some nice slices and pulled with sauce for some sandwichs.

    I'd say it was operator error. The ribs only sat out for maybe a half hour, still cold. Only let the smoker get up to about 230°(Maverick). I used 3/4 small Weber chimney of KB. Full water pan, room temp. I thought anout dumping the water, but figured the lower grate would get too hot. I...
