WSM 22.5 Hasn't Even Arrived and I'm Already Overwhelmed.

I always wait until my WSM is cool (to me, cool means the dome thermometer is all the way down and reading no temp) before putting on the lid. I usually shut all the vents right after the cook, and a while later (usually the next day unless bad weather is in the forecast, if that's the case a...

WSM 22.5 Hasn't Even Arrived and I'm Already Overwhelmed.

I've had an 18.5" WSM for almost four years now, and I've yet to modify it at all. I've found that mine works so well out of the box that I haven't really needed any mods. That said, I have been thinking about some mods recently, mainly getting the Cajun Bandit SS access door (from...

    Cold Weather Brisket Smoking

When I'm doing an overnight cook, either in cold weather or warm, I usually stay up for an hour or two after I start the smoker. That gives me time to get the smoker dialed in and stabilized, and when I go to bed I can sleep without worry. I usually wake up after four or five hours to go to the...

Breaking in the new Cast Iron piece

Everything looks great! What's involved with seasoning the CI? I have a skillet that I'm sure needs reseasoning, but I have no idea where to start.

One Down & One To Go

Looks good! How hot was your WSM running? In the third picture it looks like the thermometer is pretty high.

    Smoking cheese

I smoke cheese in my 18.5" WSM every winter. All I do is light 4 to 6 coals in my chimney starter, then use tongs to arrange them on the cooking grate, then put one chunk of cherry wood on top. I place the cheese on a sheet of aluminum foil, then use a probe or toothpick to poke holes in the...

My Choice of Mods for My 22 WSM, Thanks to This Forum and You Good People

That SS door looks great! I didn't even know they made such a thing, but you've got me thinking about getting one for my WSM. That thing looks awesome! Nice mods.

    The start of my bacon....

Looks good. I've always had the skin removed on mine, so I can't help you there. Let us know how it turns out!

    Seasoning Smoker

LOL Neil! I didn't have mine shipped (got it from a local family-owned hardware store), but I know the feeling from other stuff I've bought online!

    Seasoning Smoker

I didn't season mine. Don't recall how long it was between purchasing and my first cook, but I didn't bother seasoning it. Like Bruce said, mine ran a bit hot the first few cooks, but after that the temps stabilized and I was able to easily predict what types of temps I'll be getting.

    Smoke wood sources

I go with Chigger Creek. Shipping is not outrageous and the chunks are consistently sized.
