14.5 lb brisket, no snake on the 22 Performer

Last week's cook was pork with the coals Snaked out. Yesterday I used a basket (expanded metal) of coals with a Minion start like a WSM. The brisket was a 14.5 lb Sterling Silver brisket. Sterling Silver is supposed to be upper Choice to lower Prime quality. The brisket went from one end of...

17 lbs of pork and 11 hrs on the Performer

Inspired by this thread, I thought I'd give it a shot with a little different set up. Stopped at Costco and thought I picked up a 2 pack of pork butts (for work pot luck) but when I got home and opened the bag, surprise ... Pork Cushion meat which is from the lower part of the arm/leg and...

Smoking on kettle with BBQ guru

If I have different cuts of meat like chicken pieces I put the larger pieces like quarters nearest the heat.

Smoking on kettle with BBQ guru

Also agree with the above. if I want low and slow (high 200s) I use the fuse/snake method and for higher indirect into the 300s or more I just pile on one side. I use a rack to keep coals on one side. No controller is needed just use the vents. For high indirect heat for example open all vents...

    Extra Cooking Real Estate

No but here are the steps: Remove the current charcoal grate and use a charcoal grate designed for an 18 inch kettle which is 13 inches. The smaller charcoal grate is now sitting on the fins. Next I use a 13 x 5 inch round charcoal basket made out of expanded metal on the charcoal grate...

Improved Chicken Skin: a first try

Agree 350 to 400 is what I like.. chicken does not benefit from low and slow. It receives smoky flavors very easily and doesn't have the fat and connective tissue that a pork shoulder has which does benefit from a more gentle heat environment. I don't brine, just cut off excessive fat, dry it...

Best enameled cast iron dutch oven?

We had an 8 qt red enameled cast iron (Martha Stewart) that we returned when they had a recall on it. We did not like cooking with it. Are you looking for something nice looking or utility? During my food service career, cast iron and enameled cast iron was rarely used. However, Rondeaus or...

Heat from Pizza Kettle is cracking my stones!

Has any thougth of just getting a 1/8 or 1/4 steel plate cut to fit the Pizza Kettle. I think it's just to direct heat down, so it shouldn't have to be very fancy.

?Coal distribution for Spatchcocked chicken in 18.5 Kettle?

Indirect, charcoal on one side in and around a basket and try to shoot for 350ish. You don't need bricks unless you prefer a heat sink which is not needed with a high heat cook. Try and arrange the bird so the legs to get the most heat.

    WSM to jumbo joe

You can use a standard grate on the bottom section. Buy some longer stainless leg screws and use them to hold the grate.

    Marinade for chicken question

Sounds like way too much oil and lemon juice for amount of chicken. The breast meat will dry out if not cooked right no matter how much it is marinaded. Lawry's Herb and Garlic is a simple store bought option. My choice is just a little oil and what ever herbs I have in my garden (rosemary...

    Tray for Food Prep

The one pictured is a full sheet pan, one challenge is cleaning. Because of the size it either won't fit or very hard to fit in a dishwasher and even harder to fit in a standard home sink. They will not fit in a standard oven, however I use half (18 x 12) and quarter sheet pans all the time...

Should I get a WSM??? HELP!! I can't make up my mind

I have a 22 WSM adn had a 18, yet more often than not I use a CB Stacker option, I have squeezed up to 4 grill racks in mine. Another option is a Weber Rotiserre and mod as a Stacker, You should be able to fit 2 full racks that way. Also with a Snake method you can go low and slow in a kettle...
