    By far my favorite grill

Richard, Ultimately, there is no difference as far as the kettle is concerned...it's the bells and whistles....the table, the gas assist and the storage. I like them all. I use a chimney as well (I don't use the charcoal baskets)...but with gas assist there are no burning paper ashes floating...

    By far my favorite grill

My Performer replaced a hunk o' junk Charbroil gasser...what was I thinking? Nice looking grill...even better considering the price!

BBQ Philosophy of An Old Codger

Nice post, Lew. I, too, have a cheap offset that was my only smoker for about 7 years.....and that was after owning two very el cheapo Brinkman water cookers (which rusted out)...your post reminded why I got a WSM!

    No. 5 Sauce

Finally got around to makeing a batch of this sauce to coat some wings I'm going to smoke this Monday..... Made two changes....added 1/4 teaspoon apple smoked red savina for a bit of heat and 1 tablespoon butter for some silkiness...debating on adding more butter (or chile). Anyway....GREAT...

    SPICE WEBSITES

I have never ordered product from these places online, so I'm not sure of their shipping prices, but they both carry a wide (but not as wide as some of the already suggested sites) selection of very well priced spices and herbs. One is in Saint Louis and the other is in Kansas City. I frequent...

    I am seriously briquette-challenged

I agree with Mike R......Bank your coals tighter. I use nothing but Kbb in my Performer and get temps 450-500 with no problem. I ususally only have coals covering about 1/3 of the grill.

    Some like it hot

Are you familiar with ghost chile powder? That's some potent stuff!

    learning from my first attempt

What were your initial vent settings & did you adjust them at all? You may have choked out your fire. What was the temp when you decided to add more charcoal? "Bad Smoke"......well, that's illegal in the lower 48 & sometimes frowned upon in the remaining 2, but when I set up, I get the...

    Tri-tip steak again!

Thanks, Jim, for rubbing the fact in you can get Alaskan up in your neck of the pasture....I'm bummed! I went to the Alaskan website & see they have actually expanded their distribution quite a bit..... Sigh, maybe someday.

    Tri-tip steak again!

As good as the food looks, the beer looks even better!!! Can't get Alaskan here in the midwest

    New Performer owner here

Gunar, did you try to ignite the gas again? To my knowledge it's not supposed to cut off without you turning it off...a problem, maybe? Anyhow, it didn't take long for me to trash the baskets (they're a good idea in theory...but useless, IMO)....not to mention that 24 briqs total just ain't...

    Indirect Grilling

I second Jim.....one side = more room + a cooler side...but whatever works for your style is what works best...try both.

Restoring (not seasoning) very old Cast Iron

I was given a pan that was pretty bad off and was wondering how to clean it up cheaply, as you are. I read somewhere to soak rusty cast iron in Coca-Cola....so I gave the pan a good soak (about three hours) in a cooler with two or three 2 liters of Coke poured into it to cover the pan....gave...

    WSM 22 performer cart

Adam, that is outstanding!!! I am highly impressed with this idea. You should post some more pics of the "detail" structural changes you made & how you rigged up the autostart. Awesome!

    Red Beans and Rice w/Andouille

Funny you say that, Ray, because my recipe for RB&R uses beer as part of the cooking liquid. I usually use a lager, but I can see where your thoughts would fit in. I never thought of wine...just one of those things...that's why this recipe caught my eye...still, quite a good recipe and the...

    Pimp my WSM 22.5

I would get the Cajun Pimp Kit from Cajun Bandit for $200 (rotiss works on both WSM and kettle) and pocket the rest. Forget the ATC....you don't need one.

My New WSM has a factory installed Thermometer

    Red Beans and Rice w/Andouille

Tried this recipe last night (finally) and it turned out very good. A keeper. The only thing I question is the soaking of the beans in wine. I did so (for about 8 hours), and could tell no difference in the finished dish (as compared to what has been my main recipe for RB&R I've used in the...

Illinois > Springfield: Smokey Bones Bar & Fire Grill

There's a Smokey Bones in Fairview Heights, Il,also. It's OK, nothing to rave about.
