    Thx! I put on a 7.2 and 9.5 lb butts at 11 pm last night. At 6 am the we're at 163. I foiled per SYD reccs, targeting about 10:30 to pull them if all goes well.

    Do you use water in the WSM with low and slow brisket?

    Yes. I am in the minority here but I use the pan with h20. I use have a pan of water and it's all gone at 8.5hrs at 225. I do use a drip pan on the lower grate to ensure clean up is easy. Ymmv

    I spray mine with grill cleaner in a large trash bag in the backyard and then hose off. I would never try to clean in the kitchen sink, big mess!
