    I never did used the water pan. Seems most eventually ditch it so I learned on an empty pan with a saucer. You may need a couple cooks to get some build up but if you catch temps on the way up it's easy. Nate

    Rain and Temp??

    Welcome Chris, I would rig something to protect your smoker from the rain. What's the saying? "an ounce of prevention..." I did a HH brisket last week and it started raining half way through. Temps drop about 50 degrees. So yeah, rain most definetly will be an obstacle during cooks. Good Luck

    I like to do mine on the WSM or kettle due to the roasted veggies and peppers in my recipe. I'll let my ingredients get to know each other for an hour or so and then I bring it in and put it on the stove to simmer before serving. No need to get the crock pot dirty.
