2014 Product Trends for Barbecue Industry from HPBA

Great read. Interesting to see the gas/charcoal breakdown. It will be interesting to see if the wood pellet share continues to increase. Cost of entry has to be a prohibitive factor.

    Burgers on new CI system

Great cook. I love these posts that give me some great ideas. Would have never thought of using my Gourmet System Wok like that. I might need to try that out.

A small brisket, sliced and chopped

I'll list a few steps. I should have put this in the initial post. I got the flats out of the package, washed them off and applied a bit of olive oil to the entire meat. I then applied some store-bought rub. I used Saltgrass Steak Rub with a little bit of my own Cayenne pepper. Let it sit...

A small brisket, sliced and chopped

    Franklin BBQ, by the numbers

Aaron is a great dude. Great story and humble as can be from what I have heard. More importantly he has been an inspiration for many. There is a BBQ spot near my named Corkscrew BBQ that is following the same blueprint. A husband and wife team started as a BBQ trailer, now they are an...

    Hello from Spring, Texas

I have been here for awhile, but I felt I should do one of these posts. As I grew up, my mom was the smoker in the family. She had an old barrel smoker and make the best ribs I ever tasted as I grew up. When I got my own place, I got a "shoebox griller" that I used on my apartment balcony...

    Weber Grill Academy Experience

Amazed that they would completely bypass the state of Texas. I have griped to Weber about it and got a response saying they just couldn't secure a location this year. I find that hard to believe, but what are ya going to do.

Flat on my new 14.5 WSM

Thanks everyone. I definitely going to take me a few cooks to get used to the 14.5, though I really like the smaller size. Makes more sense to use that one most of the time. As far as the brisket, I probably was being too hard on myself and J Hoke is right, I probably could have left it on a...
