    Pork Tenderloins inspired by Jim!

First I would like to thank Jim Lampe for his constant contribution of incredible cooks. He often combines marinade and seasonings. I always have seemed to do one or the other. Not this this. Decided to mix it up with some recent purchases. Using the below cast of characters, I marinated...

First pork butt ever on WSM

Well I'm too late to offer advice so I hope it worked out ok. I have held in a cooler for 6 hours, maybe even longer. Kept the temp probe in it and it was still in the 160's when I pulled it My concern with going straight to the fridge is that it will create a lot of condensation on it. Hope...

How to drop temp on 22.5 WSM...

    Mold

Well my first wisecrack remark would be to use it year round:wsm: But as others have said, keep the water pan clean regardless if you use water or just foil and store with vents open

    Charcoal Challenged

You'd be surprised how long I did it wrong without reading the instructions. Yes, there are instructions on the bag :). Who would have thought it made a difference if you tore it off whe facing the front of the bag vs the back.

Looks great and cooked perfect. Did of get much flavor by injecting with beef broth. I am looking for how to get more "seasoning" flavor into the middle
